Welcome to our third edition of 12 Wines of Christmas. In this series we’re going to explore 12 wines that we think you should be drinking this Christmas. We’ll tell you why we have chosen it, the food pairings we recommend and a little bit more info on the winery/region.

So, without further ado and in no particular order, let’s introduce #3 in the 12 wines of Christmas!

WHAT IS PAXTON THE GUESSER RED?

The Guesser is a series of both red and white wine from the iconic Paxton Estates in Mclaren Vale Australia. The series explores the terroir of their many vineyards and brings a mix of styles/flavours together in fantastic, well balanced blends.

The Guesser Red is a fantastic blend of Shiraz, Cabernet Sauvignon and Grenache Noir, three fantastic grapes, which grow very well in Mclaren Vale and work together to bring well balanced, full-bodied red wine.

HOW DOES IT TASTE?

The Guesser Red is a lovely, full-bodied red wine that boasts complex dark fruit flavours, spice – reminiscent of cinnamon and oak aromas. This wine has a fruity youthfulness to it, which makes it lively, expressive and fun to drink. Despite this, the wine has all the ageing potential as it is rich in alcohol, has subtle – yet pronounced tannin and is a joy to drink.

WHAT SHOULD I PAIR PAXTON THE GUESSER RED WITH?

Cheese. Not just any cheese though, you’re going to want something that has substance, texture and flavour. Basically, something that can stand up to the body/alcohol content but not overpower the wine. That’s why we would recommend either Camembert or Comte. Both cheeses are different, Camembert is very creamy and has a rich texture, where as Comte is a harder cheese, however the tasty is creamy, buttery, has hints of nut and has a sweet finish. We would recommend if possible getting 24 month aged Comte as the flavours have matured and parts of the cheese have started to crystallise.

Both these cheeses will offer flavours and textures to compliment and stand up to the wine.
